Caprial Pence, a James Beard Award winner, cookbook author and cooking instructor, spoke with The Oregonian by phone today about the new restaurant, the old restaurant and mythological fire-breathing chicken monsters.
Tell me about Basa Basa.
So, we're going to be part of The Ocean, which is four micro restaurants. We're doing Korean fried chicken, mac salad, rice, fries occasionally. And that's it. We will offer tofu for vegetarians, and we'll double fry that the same way.
What inspired the concept?
